Milchzucker ist ein nicht vergärbarer Zucker und kann somit ein Bier nachhaltig und dauerhaft geschmacklich verändern.
Er wird zum Beispiel bei einem "Milky Stout" oder bei "Milkshake-NEIPAs" während des Gärprozesses zugesetzt. 
Die Süßungskraft verhält sich gegenüber Kristallzucker 0,16 zu 1 (Kristallzucker oder Saccharose = 1).
Aufgrund der grundsätzlich weniger süßlichen Geschmacksausprägung eignet sich Milchzucker hervorragend
zur harmonischen Hebung des Mundgefühls ohne in Richtung Radler zu driften.
